The breakpoint, or the location where the high velocity and low velocity air streams collide and cut across the oven, is ultimately responsible for cooking your product.
Ovens with continuously rotating dampers (the most common on the market) do not allow you to focus the breakpoint air where you need it.

Users can alleviate cold spots (areas of the rack that are not cooking consistently) by simply adjusting the graphical interface on the touch screen. Total Flow Control™ breaks the oven down into multiple zones — up to 5 zones on each wall and up to 5 zones across the oven floor — where airflow can be directed, giving you control over every square inch of your oven. Oversized Fan An oversized, VFD controlled fan (instead of sin- gle speed) provides high volume, forced airflow recirculation (minimum of 16 air changes). Plug fan shown. Other styles available:
Supply Ducts Two-sided knife style supply ducts with slots provide uniform airflow and greater breakpoint control.

Door Flush to Face Door is flush to the face of the oven cabinet, eliminating bacteria harboring points. Air bladder seals provide a superior seal than compression seals. Psychrometer Pan Port Access the psychrometer pan and wet / dry bulb through an access panel in the return duct. Replace the wet sock in seconds with this no tools required design. Get accurate humidity readings in return air as opposed to supply air. Lowered Return Duct V style Return duct is designed to lessen tur- bulence and air rotation. Flat return ducts do not allow air to return as efficiently as a V style return duct. No Slides on Return Duct Holes found in the return ducts eliminate the use of metal on metal slides, which causes bacteria growth and makes it easier to balance the oven.
Seal Welded Seams TIG Welded wall skins prevent the build up of bacteria found in ovens with seam gaskets.

Nesting Truck The Nesting Truck is the standard choice for use in a Fusion Tech Oven, designed specifically to work with our Total Flow Control™ package to optimize capacity and consistency. These trucks nest for easy storage when not in use. Any obstruction on a smokehouse truck will hinder the movement of airflow within the oven, which is why the Nesting Truck features a minimal side design, 12” clearance from the floor, and two wheels (rather than three) on each side to enhance airflow within your oven. Constructed of high grade stainless steel, the Nesting Truck exceeds all AMI Sanitary Design requirements for use in a food processing facility and is durable enough to withstand the most demanding environments.
Nesting Tree The Nesting Trolley Tree is the standard choice for use in a Fusion Tech Oven, designed specifically to work with our Total Flow Control package to optimize capacity and product consistency. We took the airflow-optimized design of the Nesting Truck and applied it to a hanging tree for use with an overhead track. Any obstruction on a smokehouse tree will hinder the movement of airflow within the oven, which is why the Nesting Trolley Tree features a minimal side design to enhance airflow within your oven. Fusion Tech oven screens are designed for use in food processing smokehouses, dehydrators, and steam cabinets. Each screen is fabricated to exacting quality and regulatory standards, and is designed to increase productivity and product yield in your facility. Our standard screens feature 0.375” stainless steel rods that are TIG-welded together, making them safe to use with any meat product. Screens can be custom designed to meet the needs of your specific application. Constructed of high grade stainless steel, our oven screens meet all AMI Sanitary Equipment Design Requirements and are durable enough to withstand the most demanding environments and last you for years to come.
The Fusion Tech PushPal is an innovative cart safety handle designed in response to a costly operator hand injury caused by gripping a smokehouse cart on the side edges. Engineered with a toggle clamp and two round hand grips, the PushPal easily attaches to the center post of a smoke- house cart to reduce the risk of injury from smashing, pinch- ing, and crushing that can occur when operators place their hands on the side edges of a cart. The PushPal is simple to use: place the PushPal center draw bar around the center support post of the smokehouse cart at a comfortable height for the operator, and push the toggle clamp down. The PushPal is locked into place, providing the operator with an ergonomically safe handle that keeps their hands clear of possible sources of injury.

CIP Skid
The CIP Skid is a high capacity, clean-in-place tank and pumping system designed to efficiently and effectively clean and sanitize your Fusion Tech oven. Customer supplied fresh water fills the CIP Skid tank through the fresh water inlet. Sensors located at the top and bottom of the tank read water pressure, temperature, and level, and safety switches shut the system down if the water level gets too high or too low, respectively. When a Clean Recipe is run on the oven control panel, water is pumped from the CIP Skid tank to the mixing pipe, where cleaning or sanitation chemical agents are metered into the fresh water stream to obtain the precise mixture you require.

Smokestick Wash Cart
Screen Wash Cart The Fusion Tech Screen Wash Cart was designed to hold screens and trays 30″ wide and up for cleaning and storage. The Screen Wash Cart features three anti-slip bars to keep screens upright and in place during cleaning and transport- ing. Screens stack standing up onto the cart between the anti-slip bars. Two .5″ round stainless steel bars stand 4.25″ from the face of the cart, and 2 swivel and 2 rigid casters make this cart easy to maneuver and ergonomically safe to use.
The Fusion Tech Smoke Stick Cart was designed to hold and transport oven smoke sticks when not in use.
The Smoke Stick Cart features two angled shelves for stack- ing sticks, keeping sticks from falling out during transporting and making loading and unloading of sticks easier.
Two swivel and two rigid casters make this cart easy to maneuver and ergonomically safe to use.

Belly Comb Removers The Belly Comb Remover is an innovative and automated solution for safely removing 8 and 10-tine wire combs from pork bellies. Designed in response to worker injuries caused from the hitting and pulling that occurs when trying to remove belly combs, the Belly Comb Remover is easy to use. Simply place the up to 10-tine wire belly comb into the machine, push the switch, and the machine grips the comb and pulls it out. Two options exist for how the removed combs are discharged: they can exit through the chute into a bin located below or exit from the front for manually stacking on a cleaning cart. Larger pork processors have reported an increase in productivity and a decrease in worker injuries using the Belly Comb Remover in their facilities.
