INGREDIENTS
• 1 cup uncooked bulgur wheat or cracked wheat • ½ cup dried lentils, sorted and rinsed • 1 tsp ground cumin • ¼ tsp salt • 3 cloves garlic, finely chopped
• 1 15.25-oz can whole kernel corn, drained • 2 14-oz cans vegetable broth or chicken broth • 2 medium tomatoes, chopped • ½ cup pitted Kalamata olives • 1 cup crumbled reduced-fat feta cheese

DIRECTIONS
1. In a slow cooker, mix all of the ingredients except the tomatoes, olives, and feta cheese. 2. Cover and cook on low heat for 3–4 hours or until the lentils are tender. 3. Increase to high heat and stir in the tomatoes and olives. Cover and cook the mixture for an additional 15 minutes. 4. Top with cheese, serve, and enjoy!
