Chicken Parmesan
Ingredients
Salt and pepper to taste 4 basil leaves
2 flattened chicken breast fillets, ¼ pound each 2 cups all-purpose flour 2 eggs, beaten 2 cups bread crumbs ¾ cup vegetable oil 1¼ cups Pomodoro sauce
1 cup freshly grated parmesan cheese SERVE WITH:
French fries Green salad

Instructions
1 Cover the chicken breasts with flour, dip them in the egg, and then coat them with bread crumbs. Set aside. 2 Place the oil in the Royal Prestige ® 10" Gourmet Skillet and heat over medium-high heat for 5 minutes. 3 Add the breaded chicken, lower heat to medium, and cook for 6 minutes or until evenly browned. 4 Remove the chicken from the skillet and eliminate excess oil. 5 Spoon four tablespoons of hot Pomodoro sauce over the chicken to melt the cheese and garnish with basil leaves. 6 Serve with French fries and green salad.
