APPLE TARTS
A Recipe from the White House Pastry Shop
INGREDIENTS: • 6 cups apple, peeled and diced • 1/4 cup water • 1/8 teaspoon lemon juice • 1/2 cup sugar • 1 lemon, zested • 1 teaspoon cinnamon • 1 tablespoon vanilla extract • 1/8 teaspoon salt • 3 tablespoons cornstarch
DIRECTIONS: 1. Combine the first eight ingredients in a large pot and cook over medium heat until the mixture comes to a boil. 2. Mix the cornstarch and cold water, then stir it into the pot. Lower the heat and cook until the mixture boils again and thickens. 3. Set aside to cool. 4. Roll out the pie dough to 1/8 inch thick. Use a round cookie cutter to cut circles and press them into a muffin pan. 5. Poke the dough with a fork, place parchment paper inside each cup, and fill with dry beans. 6. Bake at 375°F until the edges are golden. 7. Remove the parchment and beans and bake for 10 more minutes. 8. Let the shells cool, fill with the apple mixture, and enjoy!
