Last month, our cover shot was of the delicious macarons made by a new business in town U.Cake. Of course, the desired intention of you seeing those lovely cookies was to have you head out and taste them for yourselves. Of course, it would help if I listed the right address for U.Cake, which is

This month, we are featuring several new businesses that I thought might be of interest to you, including K’s Plant Collective, Big Riggs Charters & Tackle, the previously mentioned U.Cake and Riva, the new Italian restaurant. Now, if you know me, you will know I have been pitching, begging, and praying to anyone who would listen for a nice Italian restaurant in the area. Our area is rich with a diverse culture of amazing restaurants, a classic Italian one was the only thing I think we were missing! As usual, our community is filled with fun events throughout the summer. Just a few to note. On July 10th comes the Seniors Picnic in the Park at Pinafore. If you have not been before, make sure you take some time this year to make it out to the event’s 25th Anniversary. With several shows running throughout the summer, I would also list the Port Stanley Festival Theatre on my summer bucket list. I have my tickets and am excited to see Hurry Hard and Bigfoot . Of course, we can’t list anticipated events without mentioning Port Stanley’s own CALIPSO Festival, held August 2nd to 5th, of which we are a proud sponsor! Last November, I co-hosted a special event called St. Thomas Seniors Got Talent. I am happy to say it will be returning this November 2nd. Proceeds from ticket sales go to Hospice of Elgin, and last year, we were able to contribute $1500 to this amazing cause. Just because it has St. Thomas in the name doesn’t mean anyone from Elgin can’t participate; if you are 55+ and a resident of Elgin County, then you are free to register to audition, which will be held October 3rd. If you have a talent that you would like to share, I will encourage you to sign up for auditions by emailing stthomasseniorsgottalent@gmail.com. I just need your name, contact info, and what talent you want to showcase. Last year’s winner was able to use their win as a springboard to some other shows! Just a reminder: we do not publish in August, so the next issue of Port Stanley Villager will be in September. But in the meantime, I hope to see you at some of these amazing events! Big Riggs Charters & Tackle by Peri Hayes
Born and raised in Port Stanley, James Herr’s latest venture has been evolving his tackle business into Big Riggs Charters & Tackle, named after his beloved son, Riggs. As he introduces, “During COVID-19, I got into making spoons for the local fisherman.” Included in preparing fishing lures, James offers custom painting and sourced a Canadian supplier for his powder coating service. For the previous several years, James supplied surrounding tackle shops, Dixie Dairy Bar in St. Thomas and Lambeth Rod & Tackle in London. He assures that his tackle will continue to be available. James earned his Captain’s License last summer and is the proud owner of an ocean-worthy fishing boat with a brand-new motor from Advanced Motorsports LTD. James is immersed in merging his ongoing business with his sport fishing charter service, which entails welcoming four to six individuals on his Striper 2100 at a time -- depending on the number of children on deck. James highlights that he provides life jackets for his guests. “My dad ran charters in Port Stanley when I was really young,” James details. With captains in his family and experiencing fishing with his dad throughout his life, James is familiar with Lake Erie and proficient in which lure is most effective. He reveals, “The last four of five years have been absolutely amazing for world-class fishing out of Stanley: Pickerel and Rainbow trout. We do pick up the odd salmon too.”
With 10 years of development in processing fish, James aims to utilize his skills by including this feature in his package. While discussing what excites James about his business, he voices with determination, “That’s what I’m about -- getting people that fish they’ve never had before. Well, I’m going to.” James announces that there is potential for him to purchase another boat in the future. Passionate about facilitating a blissful adventure, James earnestly expresses, “I am super excited about Port Stanley, because of the amount of people here and the people who will be able to see the kind of fishing that is in Port Stanley -- as well, taking them out to catch their fish of a lifetime.” Big Riggs Charters & Tackle presents a flat-rate charge of $500.00 for an Evening Charter from 5:00 pm until dark, while a Regular Charter from 7:00 am until 1:00 pm is priced at $650.00 -- costing an additional $100.00 per hour beyond the scheduled time. Riva Italian Restaurant by Peri Hayes Leo Larizza excitedly discusses the opening of Riva Italian Restaurant in the heart of the lakeside village. He shares that “Riva” is an Italian name that translates to “by the water” or “from the shore.” Riva is situated in the West Pier District. Leo enthusiastically details, “In this building, we have Riva Italian Restaurant, The Stork Lounge, and Port Stanley Brewing Company. We felt that the Italian restaurant would suit this area well.” Meanwhile, The Stork Lounge will present an array of photos with Port Stanley’s history on display. The original piano from The Stork Club will also be featured in their lounge. While describing Riva, Leo speaks highly about their certified Pizzaiolo from Italy: “He has his distinction in making the best pizza possible.” As well, Riva’s exquisite Italian-inspired menu will be brought to life by Certified Chef Terrance. Leo, who has been immersed in the hospitality industry for 40 years and counting, joyously expresses, “I love people and food. We match our ambiance with great food, wine, cocktails, and beer. My philosophy is that a great server takes care of the people. It’s not just about food, it’s about the experience.” Presently, Leo is delighted to be the Chief Operating Officer of West Pier District. U.CAKE, Unequivocal Culinary Quality by Peri Hayes When Mykola and Iryna Bilovol moved from Ukraine to Canada in 2022, they decided to bring their business idea and inspiration -- to pay homage to their heritage -- with them. Opening U.CAKE in Strathroy in January of 2023, Mykola and Iryna are delighted to have established their second location at 211 Main Street, Port Stanley, as of May 4th. Mykola conveys, “We were in Port Stanley a lot. We are addicted to this place. Our kids love this place. We decided to expand the business. K’s Plant Collective by Peri Hayes Kim Santos celebrated the soft launch of K’s Plant Collective on May 3rd, officially opening her doors on May 10th. Upon a Tarot card reading from her friend, Casey, Kim felt that pursuing this venture was the fulfilling next step for her. With abundant horticultural inspiration, Kim thoughtfully reveals, “I love plants. I thought, maybe I can do something with this. I was really excited and dove in head first.” The business was born out of Kim’s home and has since transformed to their 204 Carlow Road location. “This is it,” she beams. This is not Kim’s entrepreneurial debut, as she previously owned The Fresh Wave on William Street with her mother. Having lived here for 16 years and counting, Kim feels at home situating her store in Port Stanley. “The village has been amazing!”, she announces. Kim is proud to continue offering visits to nearby residents who experience difficulty shopping online or with travelling to K’s Plant Collective. “I get to play in the dirt every day,” she enthuses. “I can allow my creativity to soar.” Kim is passionate about guiding others in discovering which plants will thrive best, being suited to their lifestyle. Asked what excites Kim about her business, she replies, “Showing people that they are great with plants when they believe they are not.” Kim’s customers send pictures to her as a means to share their progress. The STEGH Foundation: Transforming Tomorrow Campaign by Peri Hayes The St. Thomas Elgin General Public Hospital (STEGH) Foundation is excitedly immersed in their Transforming Tomorrow Campaign, proudly launched on May 29th. With a goal of raising eight million dollars to enhance and expand their Diagnostic Imaging Department, this fundraiser entails improvements toward CT scan, nuclear medicine, X-ray, and ultrasound services, in addition to the installation of STEGH’s first MRI machine. Remarkably, construction is 45% complete. As Diagnostic Imaging is a critical component of healthcare, STEGH strives to streamline the Diagnostic Imaging process for patients -- prioritizing registration as a means to amplify accessibility and result in quicker diagnosis. Mary Lou Crowley, STEGH Foundation’s CEO and President, enthuses, “This is the first ever MRI machine in Elgin County, and I know that our community is ready for it.” Mary Lou is passionate in her role, voicing, “Coming into my 11th month, it has been a real privilege to lead the foundation, board of directors, staff team and dedicated volunteers as we’ve embarked on this significant, eight-million-dollar capital campaign.” When discussing Jeff Yurek, the campaign chair, Mary Lou notes, “He demonstrates true leadership, and his passion is unparalleled. He ensures that the community is aware of this much-needed transformation of Diagnostic Imaging and has been a true champion.” At the aforementioned launch, the STEGH Foundation announced a one-million-dollar matching gift from the FDC Foundation. “The FDC Foundation believes in the power of community,” Mary Lou explains, “And the profound impact that access to advanced healthcare can have on every individual in St. Thomas and Elgin County. They hope to inspire members of the STEGH community to give generously, knowing that their contributions will be doubled and their impact magnified. Together, we can ensure that the latest in diagnostic imaging technology is available right here in St. Thomas, providing exceptional care and improving the lives of our friends, families and neighbours. It’s not just about technology; it’s about transforming lives and creating a healthier future for all.” While speaking at the launch, Stefan Potoczny, Chief of Diagnostic Imaging, announced a pledge of $25,000 to the Transforming Tomorrow Campaign on behalf of himself and his wife, Jacqueline. This tremendously generous donation was the first to be matched by the FDC Foundation. Mary Lou exclaims, “We were absolutely thrilled with Dr. Potoczny’s
announcement.” In accordance with the FDC Foundation’s commitment, the STEGH Foundation has until December 31st, 2024, to raise this one million dollars. Asked what personally excites Mary Lou about the Transforming Tomorrow Campaign, she replies, “For me, it’s about the commitment our community has already made and continues to make -- we are at 80 percent! What is rewarding is that people truly care about this hospital. With the generosity and commitment of a board of directors, staff and campaign volunteers, we are so close to the completion of this campaign.” She proceeds to express her gratitude for the community’s support, as well as for their FDC Foundation partnership: “It is very heartwarming. I have been blessed, and I feel that our community is blessed.” Mary Lou concludes, “A huge thank you to our donors, everyone in St. Thomas and to all of Elgin County for coming together to bring this Diagnostic Imaging Department to life, and bringing this diagnostic care closer to home. New local owner for Lambeth funeral home
