It is often accompanied by jam, sweet cakes and lemon, whi- ch symbolise warmth and a wel- come greeting in daily life. It is cu- stomary to first eat a spoonful of jam and then sip the tea, rather than mixing them directly. An inte- resting element of bygone times is that tea was used during marria- ge negotiations and its sweetness when served by the bride-to-be si- gnalled consent; sweet tea indica- ted acceptance, while unsweete- ned tea was a sign of rejection. Surrounding area: burning nature One of the country’s most unu- sual attractions is located not far from the city: Yanar Dag or the “burning mountain” is located approximately 25 kilometres from Baku city centre (around a 30-mi- nute drive). Natural gas esca- pes from the ground here to crea- te a continuous flame that burns continuously, regardless of weat- her conditions. The site has been arranged to cater to visitors, with trails and observation platforms. It is possible to approach relati- vely close to the fire, though mo - vement is restricted to safe zo- nes. This eternal fire is at its most impressive at dusk or during the night. Located nearby is the Ateshgah, a historic fire temple that was used by Zoroastrians and Indian traders. This magnificent com - plex arose out of religious devoti- on to the natural fire that emerges from the ground here. Stories go back many centuries, to the first followers of Zarathustra. Gobustan: unearthly landscape Located approximately 60 kilo- metres from Baku is Gobustan, an area known for rock carvings that date back tens of thousands of years and unique mud volca- noes. A tour here includes a mo- dern museum with interactive ex- hibits, before heading onto the local terrain. The mud volcanoes are safe, producing mild and co- ol eruptions, while the landscape appears surreal, with its grey po- ols and mud bubbles.
