Hello Burscough

FROM A BASE TO BOOTHS Located in Lancashire, our Burscough store opened in July 2015, its recognisable and unique aircraft hangar style shape is by no coincidence. It’s sited on the former 650 acre HMS Ringtail airfield which was a Fleet Air Arm naval air station commissioned in September 1943 and originally used for fighter squadrons.With the store designed to preserve and acknowledge the site’s proud histor y. During the construction of the Ringtail Retail Park, the existing memorial to those who served at the airbase was relocated and

In ever y issue of The Good Grocers we will be visiting one of our stores and catching up with some of our colleagues. Our colleagues at Burscough store are keen fund raisers for local charities and over the years they have raised thousands of pounds. They get up to all sor ts! Including the annual (and occasionally ver y wet) raft races in the canal as par t of the Burscough heritage weekend, fancy dress days and a few male colleagues facing an eye-watering charity leg wax.

Within the memorial garden you can say a little hello to a life size, bronze sculpture of a Fleet Air Arm pilot, positioned to watch over the former airfield that we affectionately named ʻFrankʼ. Fun aside, their hard work is testimony to the local charities they have suppor ted, including the funding for an outdoor sensor y room for The Alfie Lund Fund, and recently, funds for Lifting Louis.

A CHRISTMAS ‘CAROLE’ Each year for the Booths Christmas Book we hold a recipe competition for our colleagues to feature their seasonal delights. Carole from Burscough entered our 2020 competition and won! We simply couldn’t resist her delightful golden caramel shor tbread and she’s shared her secret to these sweet treats with us. If you haven’t tried them already over the festive period, you can find the recipe at booths.co.uk/recipes . We also asked Carole what she enjoys most about working at Burscough store: “I love the team spirit and banter and that I feel appreciated and my good work is recognised by all management and colleagues – it’s always busy and there is always something to do.”

Healthy hearty

It’s time to blow off the 2020 cobwebs and focus now more than ever on our well-being inside and out. You will find a selection of fantastic healthy, nutritional ingredients in our seasonal aisle, which will have you cooking up a storm in the kitchen!

WHITE BEAN SOUP WITH BACON & CROUTONS Serves: 4 ︱ Prep time: 15 minutes ︱ Cooks: 25 minutes

INGREDIENTS FOR THE SOUP 1 small white onion 1 small carrot 1 small stick celer y 25g butter 1 garlic clove, crushed ¼ tsp mixed herbs

METHOD 1 Finely dice the onion, carrot and celer y. 2 Melt the butter in a saucepan and add the diced veg and cook gently until soft. 3 Add the crushed garlic and the mixed herbs. 4 Add the veg stock, the tin of beans, including the liquid and bring to a simmer for 15 minutes. Season to taste with salt and pepper. 5 Fr y off the streaky bacon until crispy. 6 For the croutons mix the diced sourdough with the olive oil and bake in the oven at 200°C / 180°C fan / gas mark 6 for 6-8 minutes until golden brown. 7 Toss the croutons with the Parmesan whilst still hot and then allow to cool. 8 Serve the soup with extra shavings of Parmesan, crumbled bacon, a handful of croutons and chopped parsley.

RED LENTIL HUMMUS Serves: 4 ︱ Prep time: 10 minutes ︱ Cooks: 12 minutes

INGREDIENTS 200g red lentils 2 tbsp Tahini 1 lemon (juice and zest) 3 tbsp sunflower oil 1 clove garlic, crushed 1 tsp cumin ½ tsp coriander

METHOD 1 Cook the red lentils for 12 minutes in boiling water. Drain and allow to cool. 2 Place the cooked lentils in a food processor and add the remaining ingredients. 3 Pulse until it is well mixed. If you like it smooth pulse a little longer. Add a little water if you prefer a looser consistency. 4 To season add the salt, pepper and a pinch of cayenne. 5 Serve with lightly toasted bread and a selection of fresh vegetables. CHEF’S TIP Swap out the sunflower oil for coconut oil, the Tahini for peanut butter and salt for soy sauce, for an Asian style satay dip.

5 MINUTE TOMATO SAUCE Serves: 4 ︱ Prep time: 10 minutes ︱ Cooks: 15 minutes

INGREDIENTS 1 tbsp olive oil 1 clove garlic 1 shallot ½ tbsp cider vinegar 1 tsp sugar Pinch of chilli flakes 1 tin of chopped tomatoes Small bunch basil Salt and pepper to taste

METHOD 1  Thinly slice the shallot and garlic and gently fr y in the oil for 1 minute. 2 Add the vinegar, sugar, chilli flakes and continue to cook for 30 seconds. 3 Turn up the heat and add the chopped tomatoes. Once it has come to the boil, remove from the heat and season with salt and pepper. 4 Add the sauce and chopped basil to a blender and pulse until you’ve reached your desired consistency. CHEF’S TIP Add 200ml of hot veg stock for a quick and easy tomato and basil soup.

This sauce is really versatile. Perfect for pizzas, pastas or even topped on chicken!

FROZEN FRUITY FIZZ CHILLER METHOD 1 Boil and cool 3 litres of water (this will make your ice clear).

5 Star t filling in between the two vessels with your choice of sliced fruits , flowers or foliage and fresh herbs and then fill the gap with the remaining water. 6 Freeze overnight and when you’re ready to use it, let it sit at room temperature for about 20 minutes and gently remove both vessels to reveal your creation. 7 Place onto a suitable tray with a lip to catch any melted water.

2 Find 2 different sized vessels , 1 smaller than the other. Make sure your bottle of choice can fit in the smaller vessel. An ice bucket and a plastic vase work well. 3 Pour about 5cm of water into the large vessel and freeze. 4 Place the small vessel inside the centre of the larger one and weigh it down with something heavy. 10

A treat for two KING PRAWN TAGLIATELLE Serves: 2 ︱ Prep time: 15 minutes ︱ Cooks: 12 minutes

INGREDIENTS 100g dried tagliatelle

METHOD 1  Cook the tagliatelle in salted boiling water for 8 minutes. Meanwhile heat up the sunflower oil in a fr ying pan and add the cherr y tomatoes and king prawns. 2 After 1 minute turn the king prawns and the tomatoes, the tomatoes should be star ting to char and blister. 3 Add the thinly sliced fennel, garlic and passata, warm through and then remove from the heat. The fennel should still have a slight crunch. 4 Drain the pasta and add to the sauce. 5 Season with salt and pepper, return to the heat to warm through and mix well. 6 Serve with grated Parmesan and share some garlic bread for a romantic Valentine’s date night. CHEF’S TIP For a vegetarian alternative, remove the prawns and add some grilled slices of halloumi.

No leftovers here! SUNDAY ROAST PASTIES

Serves: 4 ︱ Prep time: 20 minutes ︱ Cooks: 25 minutes

INGREDIENTS 1 pack ready roll shor tcrust pastr y 200g leftover roast meat (beef, pork, lamb or chicken) 100g leftover roast potatoes 100g leftover veg (carrots, peas, broccoli, swede, parsnips) 100ml leftover gravy Salt and pepper 1 tsp mixed herbs 1 egg, beaten (to glaze)

METHOD 1  Dice all of your leftovers and place in a mixing bowl with the cold gravy. Gently fold together and season to taste with salt and pepper. 2 Roll out the pastr y and using a saucer, make sure you can cut three large circles from the pastr y. 3 Fold all the pastr y scraps together and roll out again, big enough to cut one more circle. 4 Lightly brush the edges of the circles with a little water and place a generous mound of filling, just off centre, on each circle and fold over to form a crescent. 5 Press down the edges to seal and then crimp the edges with a fork or you could fold the edges like a Cornish pasty. Place onto a tray lined with parchment. 6 Brush each pasty with egg and sprinkle a little mixed herbs and salt and pepper on top. 7 Bake in the oven for 20-25 minutes. Serve with mustard or a nice chutney.

A NEWWAY TO USE DISCOVER leftover herbs

HERBY ICE CUBES These little cubes of flavour pack a big punch. These are great to add flavour to soups, stews or sauces. Blanch your leftover herbs in boiling water for 10 seconds and cool quickly under running cold water. This will keep the herbs bright green once frozen. Pulse in a blender until smooth with equal quantities of water then pour the mixture into your ice cube trays. Once frozen, pop out of the trays and place them in a plastic bag. They will last in the freezer for up to 3 months.

OVEN DRIED TOMATOES The sun is in shor t supply but you’ll be surprised with the flavour of these oven dried tomatoes. They will last in your fridge for a couple of weeks – if you don’t eat them first! Cut any old, soft or unused tomatoes in half and place on a baking tray and give them a drizzle of olive oil and a few drops of balsamic vinegar. Place a thin slice of garlic, a few thyme leaves or mixed herbs and a pinch of sugar and sea salt on top of each tomato. Dr y in a low oven (80°C) for about 8 hours. Place the tomatoes and any juices, in a clean air tight jar and top up with olive oil.

HOMEMADE CRACKERS Absolutely irresistible! You wouldn’t think these tasty crackers star ted off as stale bread. They are perfect topped with cheese from our cheese counter and our Lancashire chutney, or with a dollop of pâté spread on top. Remove the crusts off any leftover slices of bread. Roll flat with a rolling pin and cut the bread into fingers. Glaze each piece with a little oil or egg white and then sprinkle with your favourite seeds, herbs and spices. Place onto a baking tray and dr y in the oven at 80°C for a few hours or until they are crisp. Store in an air tight container and they are good to keep for 3-5 days.

INGREDIENTS FOR THE BUTTERSCOTCH SAUCE 50g vegan butter 25g soft brown sugar Groovy Food Organic 125ml coconut milk ¼ tsp mixed spice A pinch of sea salt FOR THE CARAMELISED BANANAS Agave Nectar Honey Flavour Groovy Food Organic Agave Nectar Honey Flavour 2 bananas, sliced FOR THE PANCAKES 1 Box of Superfood Baker y Pancake Mix TO SERVE A drizzle of Groovy Food Organic Agave Chocolate Sauce

METHOD 1 Make up the Superfood Pancake Mix as per the instructions. 2 Melt the vegan butter in a small saucepan over a medium heat. 3 Add the brown sugar and stir to dissolve. 4 Add the honey agave nectar, coconut milk and mixed spice. Stir to combine and bring to the boil. Boil for 5 minutes or until thickened and sauce consistency. 5 Add sea salt to taste. 6 For the caramelised bananas, heat the honey agave in a non-stick pan over a high heat. Add the sliced bananas and fr y to caramelise on both sides. 7 Assemble your pancakes and top with the caramelised bananas and the spiced butterscotch syrup. For an extra decadent treat add a drizzle of Groovy Food Organic Agave Chocolate sauce. CHEF’S TIP This spiced butterscotch sauce is so versatile, drizzle warm over ice cream, waffles or French toast – anything goes!
