The remainder are used for personal consumption. “There is nothing like going to the oyster farm, pulling a couple of dozen out and serving them to friends on a great Hamptons evening,” Skillett says. When one considers oyster farmers in the salty shores of the Hamptons, it naturally sparks images of generations of local fishermen. Although Skillett isn’t your average steward, he knows his way around a seabed. “I certainly have come to respect those who make a living at oyster farming. It’s an amazing natural process that is important and, on a large scale basis, a lot of work. When I sit at a restaurant and have a dozen oysters, I really appreciate what goes into the farming, harvesting, and distribution of them. He adds, “There’s nothing like a fresh oyster.” The future of oyster farming has yet to be determined— we are a long way away from being dubbed the oyster capital of the world again. But more areas around the coastal United States are being designated as oyster farms, including the waters off of Texas. “The popularity is creating more demand and in response more farming is being done which, in turn, really has a positive impact on our natural water areas,” Skillett commented. While oyster gardeners must be residents of East Hampton Town, anyone half-interested in producing their own delicious dozen is welcome to attend program lectures and presentations.
