Baked Pineapple Salmon

October brings us National Paralegal Day, which makes it a great time to recognize the people who keep our law firm running behind the scenes. At Evans Moore, we know we couldn’t do what we do without the hard work of our paralegals and other support staff. That’s why we’re proud to spotlight Jessica, a paralegal who plays a key role in supporting our clients and the legal team alike.

• 1 can pineapple slices, drained, reserving 1/4 cup of juice • 2 1/2 lbs side of salmon • Salt and pepper, to taste • 1/2 cup sweet chili sauce

• 1/4 cup unsalted butter, melted • 4 tbsp hoisin sauce • 3 garlic cloves, minced • 2 tbsp fresh lemon juice • 2 tbsp fresh cilantro, chopped • Lime slices

Directions

1. Preheat oven to 375 F. 2. Line a baking sheet with aluminum foil. 3. Place pineapple slices on baking sheet. 4. Season both sides of the salmon with salt and pepper and lay over pineapple. 5. In a small bowl, whisk together chili sauce, melted butter, hoisin sauce, garlic cloves, lemon, and pineapple juice. Pour over salmon. 6. Bake for 15 minutes or until cooked through. 7. Garnish with cilantro and serve with lime slices.

Prior to joining Evans Moore, Jessica worked in the health care field for nearly two decades. She spent most of her time in women’s health, where she focused on helping patients with high-risk pregnancies and fertility. She coordinated patient care, handled insurance, and served as a patient advocate. That experience gave her a firsthand look at the challenges people face when navigating medical systems, and it shaped how she approaches her work today. When the time came for a career change, she looked to her mother, a longtime paralegal, for inspiration. “She told me years ago that I would love this work,” Jessica said. “I guess I should have listened sooner because she was absolutely right.” Jessica recently completed the paralegal program at the University of South Carolina. She loved that all her instructors were practicing professionals and appreciated learning alongside people of all backgrounds. Despite starting from scratch, she dove into the program and came out with a new appreciation for the legal field, especially medical malpractice and tort law. At the office, Jessica does a little bit of everything. Her work includes handling intake calls, submitting medical records requests, following up with providers, and helping wherever she’s needed. If you called us recently, there’s a good chance you talked to her first. Jessica brings empathy, determination, and a sense of fairness to everything she does. She sees her role as helping clients who often feel like underdogs and making sure their stories are heard and their rights are protected. Ultimately, Jessica is here to help people, and we’re lucky to have her do that work with us daily.
