Eryngium HILLIER ™ Blue Waves Eryngium x zabelii
RUMFISH 75
— 2.0 oz. Gin — 0.5 oz. House Lemon Syrup — 0.5 oz. Lemon Juice — Float of Prosecco
These unfussy, long-lived plants pump out beautiful foliage and flowers year after year. Vivid amethyst flower heads are surrounded by clusters of large, steel-blue bracts on top of tall silver stems, which are encircled by rosettes of spiny, grey-green leaves. This sea holly’s blooms make quite the statement in the garden; like a miniature firework display of flowers. Very drought tolerant, once established, Blue Waves thrives in moderate or even poor soil in full sun. Blue Waves makes an outstanding cut flower for home bouquets as well.
Combine gin, lemon juice, and lemon syrup in a cocktail shaker. Fill shaker with ice, cover, and shake vigorously until outside of shaker is very cold, about 20 seconds. Strain cocktail through a hawthorne strainer or a slotted spoon into a coupe or large flute. Top with prosecco; garnish with a lemon twist.
