Recipes from Cousin D **15 YEAR BIRTHDAY CUPCAKES** Can't attend the CP15 birthday? Here's your chance to join in the camaraderie as we'll feast on these cakes at the Quinceañera! Ingredients Cupcakes 1 3/4 cups our 1/2 tsp salt 1/2 tsp baking soda 1 1/2 tsp baking powder 1/2 cup butter 1/4 cup infused canola oil (dosed as desired) 1 cup sugar 3 egg whites or ~3 uid oz egg whites. 1 tbsp quality vanilla OR bean paste 1/2 cup whole milk 1/2 cup sour cream 50 mini cupcake liners or 15 full-sized Frosting 1 lb butter
Directions Cupcakes - Preheat oven to 350°. In a medium bowl si together our, salt, baking soda and powder. In a separate large bowl combine together butter, infused canola oil, sugar, egg whites, vanilla paste, milk and sour cream. Add dry mixture gradually and evenly into creamed mixture until fully incorporated. Optionally, spritz the cupcake liners of your choice (mini or full-size) with just a bit of non-stick cooking spray. Fill each one about 2/3 full, and bake 10 min (18 min for full-size) until a toothpick check comes clean. It’s a good idea to watch these as ovens can vary; they’re done when a dome forms in a slightly golden hue. Yields about 45-50 mini cupcakes, or 15 full-sized. Frosting - Cream together all ingredients (adding the powdered sugar slowly with your mixer) until uy. You may need to add a tablespoon of milk or two to help thin and make spreadable. Scoop into a piping bag and dollop onto your creations when fully cool, then decorate your heart out!
