Do you have a favourite restaurant? Hakkasan in Dubai and Vegas. It’s Chinese fine dining at its best and the service and cocktails are fantastic. What is your go-to drink? I have three drinks of choice depending on what I’m doing. I’ll enjoy an espresso martini with my girlfriend, a Hendrick’s and tonic when I’m socialising with my chippy colleagues and a Corona or two when I go to see my beloved Glasgow Celtic. What dish reminds you most of your childhood? Mince, tatties and beans. It reminds me of sitting down to eat with my mum and dad, a rarity when I was young. What is your guilty food pleasure? It has to be ice-cream so much so that I opened my own ice-cream shop, The Scoop Shack. What’s been your weirdest food combination? I’m quite partial to the Scottish delicacy of battered haggis, chips, curry and pickled egg. Delicious to me but many will say it’s a weird food combination. We serve this in the shop and it’s my personal recommendation. What one piece of equipment would you love to purchase for your business? I would love to buy a drone to deliver our orders. It would help speed things up even more. If you could have anyone join your team who would it be? Kevin Bridges, the Scottish comedian. He’s a really funny guy and his endless jokes would keep our staff and customers well entertained. It also helps that he’s a huge Celtic fan!
How did you get into the industry? I have been in the industry all my life. My mum and dad moved from Glasgow to Castle Douglas in 1977 and bought the chip shop having had no experience in the industry. My mum fell pregnant with me a couple of months later and when I came along in 1978 my parents were working all day and night, so I was brought up in the back shop where I had a play pen and camp bed. As soon as I could walk I was doing whatever I could to help out in the shop. I worked there all through school and officially went full time when I left school at 16. I’ve never looked back.
What’s your favourite food? I love a good curry, either a Thai red curry or chicken tikka madras, the spicier the better! Is there a food you won’t eat? I can’t eat liver, it’s the texture and taste that puts me off. Ironically, I’m not a big fan of fish either. Where have you had the best fish and chips? I’ve been to some of the best fish and chip shops across the country including
The Bay, Krispies, Quayside and, of course, Moore’s. What’s interesting is that although we do things differently we still produce amazing fish and chips. What side is a must with your fish and chips? My favourite side dish has to be curry sauce or tartare sauce because they compliment fish and chips so well. If you could open a fish and chip shop anywhere, where would it be? Las Vegas. It’s my favourite holiday
