Chicken Tikka Masala (4 Servings)
INGREDIENTS 2 tsp. oil or ghee 16 oz. boneless chicken breasts, cut into bite sized pieces 1 small onion, minced 1 Tbsp. fresh ginger paste
1 tsp. turmeric ½ Tbsp. chili powder Salt to taste or use a squeeze of lemon 1 ½ cups crushed tomatoes ½ cup 1% milk or skim milk ¾ cup plain yogurt, not Greek 4 Tbsp. fresh cilantro, or to taste
3 cloves garlic 1 Tbsp. cumin 1 Tbsp. garam masala
INSTRUCTIONS 1. Heat oil in a large heavy skillet over medium heat. 2. Cook chicken until browned. Remove chicken and set aside. 3. Add the onions and cook until golden, about 3 minutes. 4. Add the ginger paste, stir for 1 minute then add the garlic and cook another minute.
5. Add cumin, garam masala, turmeric, chili powder, and salt; mix well until fragrant, about 2 minutes. 6. Stir in tomatoes and milk. Simmer on low heat until sauce thickens, about 10 minutes. 7. Temper the yogurt: Place the yogurt in a bowl and add ½ cup of the sauce to the yogurt and stir. Add it to the sauce and mix well. 8. Add the chicken back to pan and simmer for 10-15 minutes or until cooked through. 9. Add a generous amount of chopped cilantro and serve with rice. Enjoy.
