Orange Sesame Tofu Stir Fry (2 – 3 Servings)

INGREDIENTS 8 oz. extra-firm tofu 2 Tbsp. avocado oil ½ cup fresh orange juice Zest of one orange 1 Tbsp. honey 4 Tbsp. low sodium soy sauce, liquid

1 Tbsp. cornstarch 3 Tbsp. white onion, diced ¼ cup thin sliced carrot 1 red bell pepper, sliced 1 bunch broccoli, chopped

3 oz. shiitake mushrooms, sliced 1 Tbsp. toasted sesame seeds (plus more for serving) Brown rice, quinoa, or riced cauliflower, for serving

aminos, or gluten free Tamari 1 Tbsp. fresh ginger, grated 1 Tbsp. toasted sesame oil 3 cloves garlic, minced

INSTRUCTIONS 1. Drain the tofu well and cut it into small cubes. Set aside. 2. In a bowl, combine the low sodium soy sauce, sesame oil, orange juice and zest, honey, ginger, minced garlic, and cornstarch. Whisk well and set aside. 3. Heat 1 Tbsp. of avocado oil in a skillet until hot. Sauté the tofu cubes until golden and crispy. Remove the tofu from the pan and set on paper towels to drain. 4. Add the remaining 1 Tbsp. of avocado oil to the pan. Add the white onion, bell pepper, broccoli, carrot, and shiitake mushrooms. Season with salt and pepper and cook until the vegetables are softened but still have a slight crunch. 5. Whisk the sauce again to incorporate, then add it and the tofu back to the pan. Cook until the sauce bubbles and thickens. 6. Stir in toasted sesame seeds. 7. Serve the stir-fry over your choice of rice and top with additional toasted sesame seeds and a drizzle of toasted sesame oil.
