Pan Fried Salmon (submitted by Andrew Smith, Kent)

Furry Friends Barritt Durbin, Warehouse Manager, Kent The Durbin Family has a Boxer named Rosie Cotton. She is a reverse brindle and will turn five in two months. Rosie is a great family dog. She loves everyone and thinks she is a lap dog. She enjoys running with the family and taking long walks with those who don’t run. Rosie will eat almost anything, but her favorite food is pizza, so we have to be careful with it. She loves to nap and needs to be near her people.

1 Salmon fillet

3 tsp Salt

2 tsp Pepper 4 tbsp Olive oil

Any herb or spice of choice (thyme or rosemary work nicely) Topping (for healthier option use 1 tbsp oil instead of butter) • ¼ cup Butter • 2 Green onion Prepare salmon Make sure the salmon is thawed and dry. Use paper towel or if you have extra time, you can put the fillet in the fridge to dry it out. Once it is dry slice fillet into strips. On the skin side apply a very light coating of olive oil to the scales and sprinkle with a mixture of salt and pepper. Put a skillet on stovetop on high heat. Once the pan is hot put in the remaining olive oil to coat the bottom of the pan. Try not to take too long so the oil does not start to burn. Put the salmon skin side down in the pan. You can now sprinkle the rest of the salt and pepper on the top of the salmon.

We also have two rabbits named Magnolia and Chubs. Magnolia is 6-7 years old, and Chubs is 2 years old. Right now, we have about 14 chickens. Eight of them are mature and lay eggs for us. Four of these chickens are named Buttermilk, Hazel, Lady Blackbird, and Firecracker.

We got six chicks a month ago, and they are growing well.

You can also add other herbs of your choice at this time. Let the salmon cook on the skin side until the pink color has changed to white 2/3 of the way up the side of the salmon. This should take close to 8 minutes. Your instincts will want you to flip the salmon early, but resist. The scales will not burn easily and help conduct the heat through the salmon meat. Then flip salmon over and cook the remaining fillet. This side should take 3-5 minutes depending on the thickness of the fillet. Topping Chop up the green onions and fry in a skillet with the butter. Take and drizzle over top of the finished salmon and serve.
