01 What's the best thing about Bar Crispin? It’s a combination of engaged and wonderful guests, a fun and unique bar design and our fabulous team. And having somewhere great to drink the best wines in such a central location like Carnaby! 02 How are the menus created? Our food menus are always seasonal and produce- focused. We're lucky to work with passionate suppliers, so we treat their produce with love and respect. Our head chef, Fabien Spagnolo, creates incredible dishes with attention to detail and generally an element of surprise, but not in a naff way. Dig down in your ice cream and find shards of caramelised white chocolate. Bite into cod’s roe toast and get a hit of tarragon oil, a pop of trout roe, with a crunch of fennel. Menus are dictated by the seasons but created with passion. 03 Out of your wines, which would you select? Le Petit Beaufort from superstar winemakers Alice & Quentin Beaufort is simply stunning. Technically a Crémant de Bourgogne (as the winery sits just outside of the Aube in southern Champagne), it's a modest yet immensely characterful wine. Only a very small number of bottles are produced ever year, which makes it even more special. 04 What's the inspiration behind Bar Crispin? Bar Crispin took inspiration from tiny wine bars around the world. An unfamiliar design courtesy of our friend Jermaine Gallacher, paired with friendly service, the best low-intervention wine and a fun menu is what Bar Crispin is all about. A place to get merry and laugh, whilst eating and drinking delicious things. 05 Top three places to eat out in Carnaby? Le Bab, Bao, Kolamba right next door to Bar Crispin (and I can’t wait to try Rita’s!).

07 Why did you choose to open in Carnaby? It's an area with so much energy and atmosphere, and it's steeped in history going back to the 1960s. I felt we could add something to the Carnaby community with Bar Crispin that wasn’t currently being offered. 08 Your best memory since opening in Carnaby? Every Monday in Carnaby surprises me and forms a lasting memory that Londoners have an unwavering appetite to eat and drink well.
