In June, LIONSCOVE had the incredible honor of partnering with Jubilee Reach to serve a hearty breakfast to children before school, ensuring they started their day nourished and ready to learn. Liam, his wife Rachel, their two children, and Jeff were deeply privileged to contribute to this meaningful initiative, aligning with our mission to B e fearless, E nrich the community, A ct with integrity, and T reat people with respect (B.E.A.T) . Our team prepared a filling meal, cooking homemade pancakes, scrambled eggs, sausage, and fresh fruit. The smiles on the children’s faces as they enjoyed their breakfast were a powerful reminder of the impact a warm meal and a caring community can have. It was a special opportunity for Liam and Rachel to continue teaching their own children the value of service and compassion. Jubilee Reach, an incredible organization, has been a beacon of hope in the community for years. They strive to build a caring and connected community by
meeting practical needs and fostering relationships. Their focus on supporting students through programs like breakfast service aligns perfectly with LIONSCOVE’s commitment to uplifting our neighbors. By providing before- and after-school meals, Jubilee Reach helps remove barriers to learning, ensuring children have the fuel they need to thrive academically and beyond. Oil-Free Takeout Chow Mein
One of the most successful ways to boost a business is by obtaining advice, insight, and support from people with unique backgrounds and life experiences. Our board of advisors has been crucial in our recent successes and continues to provide guidance that helps LIONSCOVE become the best version of itself. Scott Ruthfield is one board member who has continued to go above and beyond to support our business and investors. Scott is an entrepreneur and technologist who has lived in the Seattle area for over 25 years. Before branching out, he started his career at large companies like Microsoft and Amazon. In 2008, he started his own technology consultancy, which he sold in 2021. Since then, he’s worked as a freelance consultant to CEOs and CTOs about technology and product direction. Scott and Liam knew each other before the business came together, and once Liam created LIONSCOVE, Scott quickly jumped in and helped out. Like the other board members, Scott is here to help LIONSCOVE take a step back and consider its challenges and opportunities before taking a step forward to follow through on its beliefs about the market and teams. Scott puts most of his focus on the people-related issues, sales and marketing pipelines, and technology. Scott believes LIONSCOVE’s secret sauce is the people involved. From Liam to the entire team, he considers everyone thoughtful about business and caring about customers. While many view lending as a highly transactional business, Scott and LIONSCOVE want to separate themselves by building relationships with curiosity and care. While Scott puts plenty of time and effort into his work with LIONSCOVE, he stays busy whenever he gets extra free time. He’s a husband and father of two girls, enjoys running, is a soccer referee, and volunteers with low-income first-generation college applicants. He also recently learned to wakesurf and is considering turning that into his entire personality! Like the rest of the LIONSCOVE team, you can rest easy knowing Scott is doing everything he can to support the business!
Ingredients
Dressing • 1 tbsp ginger, grated • 1 tbsp garlic, grated • 1/2 cup tamari • 1 cup water or vegetable broth • 1 tbsp tahini • 1 tsp sriracha • 1 tsp molasses • 2 1/2 tbsp brown sugar • 2 1/2 tbsp cornstarch • 1 tbsp dried shitake mushrooms • 1/2 tsp nori flakes
Noodles • 1 package chow mein noodles, egg-free • 3 cups green cabbage, thinly sliced • 1/2 onion, thinly sliced • Additional vegetable broth, divided in splashes • 10 white mushrooms, sliced • 4 carrots, julienned or sliced • 4 baby bok choy sliced • 1 cup snow peas • 2 tbsp sesame seeds • 2 tbsp scallions chopped
Directions 1. Bring a large pot of water to a boil and cook noodles according to the package directions. Drain and set aside. 2. Add all sauce ingredients to a blender and blend on high until smooth. 3. In a large pan over medium-high heat, add onions and cabbage with a splash of vegetable broth. Stir frequently until they turn translucent, then remove from pan and set aside. 4. Return the pan to the heat, add mushrooms, and cook until they begin to give off moisture. Stir (they should sound squeaky) and continue to cook until they shrink and take on some color, about 5 minutes. 5. Add carrots, bok choy, and snow peas with another splash of broth to prevent sticking and cook until soft, about 2 minutes. 6. Add the sauce to the pan of vegetables and cook for another minute, letting it thicken. Add in the noodles and cabbage/onion mixture and stir everything to combine. Top with scallions and sesame seeds and enjoy!
