Co-owner of Chila-killer Cafe, Josie Ortega, is adamant that the restaurant she owns with her husband Martín Chaparro would be nowhere without the help of their community. Though the pair never had plans to open their own business, they seized the opportunity when a friend of Martín’s asked if he would like to buy the business. With the rallying support of friends and family members, Chila- killer Cafe opened its doors only two months after the contract was initially signed.
In the early days of the restaurant, Josie and Martín did not take on the usual role of owners, instead they rolled up their sleeves and got to work. Martín has worked in kitchens for 32 years so curating a delicious menu came easy. The menu includes familiar favorites such as chilakiles, house made biscuits and gravy, killer paninis and so much more. With only one full-time server, the husband-and-wife duo relied on their volunteers to keep the business running. And once the business began
to generate profit, instead of reaping those rewards for themselves Josie and Martín used that money to pay all those that had given their time and support. Josie explains that Chila-killer uses quality ingredients to deliver plates that they would serve in their own home to loved ones. And customers don’t go to Chila-killer Cafe just to sample food, the restaurant provides substantial portions because Josie and Martín want guests to leave full and happy.
