So, why are people turning to conservas now? Some are seeking a convenient source of nutrients like omega-3 fats. Some may be seeking a lower ecological impact, as many canned fish are sustainably caught and lower on the food chain. Paradoxically, a canned fish may often be “fresher” than a frozen fish, as canneries work with the day’s catch. But to me, a good conserva has much in common with a good bottle of wine. It's a non- perishable item which can be kept at hand in your pantry. Yet once you open the tin, you can enjoy a gourmet food with a profound connection to a specific place and time. As with wine, tinned seafood runs a range from leviathan industrial producers to small traditional canneries.
One of the most exciting trends in food recently has been the interest in tinned fish, especially traditional preparations from Iberia, often referred to as conservas . Fish was one of the first foods to be canned, but many popular preparations date back even further. Smoked fish are popular in Northern Europe, and escabeche —a vinegary sauce popular in the western Mediterranean— was spread around the world by Spain and Portugal. Delicately flavored fish may be packed in brine, mimicking the water of the ocean, but the most famous style is packed in olive oil. “To me, a good conserva has much in common with a good bottle of wine.”
Likewise, there are producers focused on traditional preparations from regions with a long history, and innovators who are exploring unique offerings and new flavors.
