Proforma Albrecht & Co. SHIFT 2019

of its profits go toward a charitable group that specializes in providing healthy meals to needy kids in the community. Yes, you read that right – 100 percent of the profits go to charity, as in every last cent. What’s more – Indianapolis is no longer the only city participating in this business model. Other major cities like Atlanta and Los Angeles have seen restaurants spring up that operate in a similar vein. And as an added bonus – several of these establishments are also environmentally conscious and sustainably focused, using locally and humanely sourced ingredients along with primarily plant-based menus as a way to combat waste. Look no further if you want to see your money being put to good use! Refuge for refugees To say that things are happening in New York City is the same thing as saying the sun rises in the east and sets in the west – it’s simply a given. But it’s the latest news in the foodservice world that literally gives the idea new life for the bustling metropolis. In Brooklyn, a former popup turned brick-and-mortar establishment has been making waves by offering much more than new American fare on the menu. It also provides culinary training to refugees from underdeveloped and war-torn nations, primarily from the Middle East and West Africa. The training is fully comprehensive and includes formal classroom instruction as well as hands-on experience for students and the results have been nothing less than stunning. In addition to the menu receiving rave reviews due to the students adding their own cultural twists to American classics, the past year has seen 100 percent (there’s that number again!) of students who graduate from the training program get kitchen jobs to

launch their culinary careers. If that’s not impressive, then what is?

Less waste, more taste Food donation programs have been one of the oldest as well as easiest ways for restaurants and other foodservice establishments to give back to their communities. But now, they’ve gone a step further with another nice addition – free staff meals. What better way to thank your employees for all of their hard work than with an after-hours banquet on the house? In addition to rewarding those hungry cooks, bussers and servers, establishments can reduce food waste while increasing employee loyalty and still having more than enough left over to feed other needy members of the community, which generates positive publicity and attracts more customers. There is absolutely no downside whatsoever, which is why we’re likely to see this approach continue to gain steam in the future. Pay it forward? Yes please! It’s never too late As unfortunate as it is, hunger exists all around the globe. But that doesn’t mean we as consumers can’t help fight it. Social media has become an incredibly powerful tool that can be mobilized in an instant for the good of society, especially when it comes to foodservice. We can write reviews, recommend dishes and show off our quirky culinary creations, so why can’t we use our influence to urge establishments in our communities to participate (or continue participating) in charitable activities? Despite what some naysayers might think, we can make a difference and these examples are the proof. Now that’s inspiring!
