Benefits of Cook and Hold Ovens

• Reduces food costs » Reduces the amount of protein shrink up to 20% compared to traditional convection ovens, allowing more product from the same cut to be served. » Low-temperature cooking naturally tenderizes meat, allowing you to reduce protein costs without sacrificing flavor. » Able to hold food at ideal temperatures, preventing unwanted drying or cooling during service. • Reduce labor costs » Overnight cooking capability helps reduce labor costs. Once cooking is complete, the oven will go automatically into a hold mode without the need for human monitoring.

• Reduce operating costs » Cook and hold ovens are energy efficient and can operate at a cost of less than $2 per day. » Do not require a hood, saving money on hood installation costs which can range from $2,000 to $4,000 per foot as well as up to $30 per day in energy costs for hood operation. • Reduce the load of other cooking equipment » The “set-and-forget” feature frees up labor for other tasks and reduces the burden on other cooking equipment during service while also allowing advanced preparation by cooking overnight and holding until peak service times.
