We’ve put together some simple tips to get you started. Start by researching the type of home you want and the typical down payment required. For many loans, this can range from 5% to 20% of the home’s purchase price. Having a specific target will make your savings goal more tangible. Open a separate savings account specifically for your down payment. This keeps

your funds organized and reduces the temptation to dip into your savings for other expenses. Review your current spending habits and identify areas where you can cut back. Dining out, subscriptions, or non-essential shopping might offer room for adjustments. Redirect these savings directly into your down payment account. Set up automatic transfers from your paycheck or checking account into your down payment fund. Consistent contributions, even small ones, will add up over time.

RED VELVET CAKE 12 Servings | Calories: no one cares, eat the cake!

An ultra-moist, buttery, and irresistibly tender cake with the perfect hint of classic red velvet flavour. Finished with a simple, creamy cream cheese frosting and a royal frosting glaze, this dessert is ideal for Valentine’s Day or for delighting the red velvet enthusiasts in your life!

In a medium mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. In a large mixing bowl, whisk together the sugar, vegetable oil, and melted butter. Add in the eggs and yolk and whisk for twenty seconds, or until very well combined. Add in the buttermilk, vanilla and food coloring and whisk to combine. Whisk in the vinegar and coffee mixture. Using a fine mesh sieve, sift the flour mixture into the batter in three additions, whisking until each addition is incorporated. Divide the batter equally between the prepared pans. Tap the bottoms of the pans against the counter several times to release any air bubbles. Bake for 25 to 30 minutes, or until a cake tester or toothpick comes out clean. It’s normal for the cake to look slightly spongy on top. Place the cake pans on cooling racks. When the pans are cool enough to touch, run a thin knife around the edges of the pans to loosen the cakes. Invert onto the wire racks. Let cool completely. CREAM CHEESE FROSTING: In the bowl of a stand mixer fitted with the paddle attachment, beat the cream cheese and butter on medium-high speed until very light, creamy, and smooth. Scrape down the bottom and sides of the bowl to ensure no clumps remain. Add in the vanilla and beat until combined. On low speed, gradually add in the sugar and beat until fluffy, about three minutes. If the frosting is too thick, add a splash of milk or cream. If it’s too thin, add more sifted powdered sugar. PINK ROYAL ICING: In a small bowl, combine warm water, light corn syrup, and extract. Stir until corn syrup is dissolved. Add sugar water to powdered sugar and stir until completely combined. Mixture will be thick. The consistency you’re looking for is a slowly dripping icing that disappears into the bowl within about 12 seconds. Add food colouring by drop until you reach the colour you want. Use immediately .

CAKE: 1/2 cups of hot coffee or boiling water 1/4 cups unsweetened cocoa powder 2 1/4 cups all-purpose flour 1/2 tsp baking powder

1 tsp baking soda 1 tsp fine sea salt

1/4 tsp ground cinnamon 2 cups granulated sugar 1/2 cup vegetable oil 1 stick (113 grams) unsalted butter, melted 2 large eggs, at room temperature 1 large egg yolk, at room temperature 1 cup buttermilk, at room temperature 2 tsp vanilla extract 3 tsp red gel food colouring, plus more if needed* 1 tsp distilled white vinegar CREAM CHEESE FROSTING: 16 ounces cream cheese, at room temperature 2 sticks (227 grams) unsalted butter, at

room temperature 2 tsp vanilla extract 4 cups powdered sugar, sifted PINK ROYAL ICING: 1 1/2 cup powdered sugar 2 tbs warm water 1/2 tbs light corn syrup 1/8 tsp vanilla or almond extract Red gel food colouring

METHOD

CAKE: Preheat the oven to 325°F. Line three 8-inch cake pans with parchment rounds and spray parchment and sides of pans generously with nonstick cooking spray. In a glass measuring cup, whisk the hot coffee and cocoa powder. Cover and let stand for five minutes.

BEE’S KNEES COCKTAIL 1 Servings

Gin lovers will adore this vibrant and refreshing cocktail that truly lives up to its name. With just three simple ingredients—honey, lemon, and gin—the Bee’s Knees beautifully showcases the intricate flavours of its star ingredient.

INGREDIENTS

HONEY SYRUP: 1/2 cup honey 1/4 cup water 5 sprigs thyme

COCKTAIL: 2 oz. gin 3/4 oz. fresh lemon juice Lemon peel and thyme sprig, for garnish

METHOD

HONEY SYRUP In a small saucepan over medium heat, cook honey, water, and thyme, stirring constantly and bruising thyme leaves as you stir, until honey has dissolved, about two minutes. Let cool to room temperature, then discard thyme. COCKTAIL In a cocktail shaker, combine gin, lemon juice, and 3/4 oz. honey syrup. Fill shaker with ice and vigorously shake until outside of shaker is very cold, about 20 seconds.

Be sure to use a local Island honey to ensure good quality! Honey syrup can be made two weeks ahead. Transfer to an airtight container and chill.

Strain into a coupe. Garnish with lemon and thyme.

Starting flowering plants indoors in February is a great way to get a head start on the growing season. We found five flowering plants that thrive when started indoors.

PETUNIAS These vibrant annuals come in a variety of colours and are perfect for containers or garden beds. • Start seeds indoors 10–12 weeks before the last frost. Provide bright light and keep the soil consistently moist. MARIGOLDS Easy to grow and pest-resistant, marigolds are a favourite for their bright orange and yellow blooms. • Sow seeds indoors 6–8 weeks before the last frost. Use well-draining soil and a sunny window or grow light. ZINNIAS Known for their bold colours and long blooming period, zinnias are a garden favourite. • Start seeds 4–6 weeks before the last frost in small pots, then transplant them outdoors after the risk of frost has passed. SNAPDRAGONS These cool-weather favourites add height and charm to flower beds. • Begin seeds indoors 8–10 weeks before the last frost. Provide plenty of light and transplant them outdoors in early spring. COSMOS With their delicate, daisy-like flowers, cosmos are perfect for filling garden beds with cheerful blooms. • Start seeds indoors 4–6 weeks before the last frost, and plant them outside once the soil has warmed.
