Over medium-low heat, cook bacon until just browned, rending out as much fat as possible. Remove from pan and set aside. In the same pan over low heat, cook onion and shallots, stirring often, for 20-30 minutes until golden and starting to get sticky. Add garlic, allow to caramelize 5 more minutes before adding bacon and remaining ingredients. Bring to simmer over low heat, stirring often, and allow to simmer 20-30 minutes until thickened to a jammy consistency. Serve warm or store in jars and serve cold.
