WHAT’S NEWWITH ME AND MY OWN?
Seems like it was only yesterday, when I graduated law school and started my law firm. Early in my career, I was given an opportunity to work as an assistant prosecuting attorney. That’s when I learned and sharpened my skills as a trial lawyer. The time I spent as a prosecuting attorney was great and truly appreciated. As my law firm began to grow, I also had to grow as a leader and a business owner. I have had to read a lot to learn about running a business better. One of the things I learned early on is that people need “access to information” to make well-informed legal decisions. And, as a result, I’ve made this a cornerstone of my business — making sure people have access to information. Mostly, we do this by providing books, guides, videos, and other resources to the public. Information changes situations.

CHICKEN PARMESAN WITH SPAGHETTI

INGREDIENTS
• 4 boneless, skinless chicken breast halves • Salt and pepper, to taste • 1 egg, beaten • 1⁄2 cup Italian breadcrumbs • 4 tbsp butter • 2 cups marinara sauce
• 4 slices mozzarella cheese • Parmesan cheese, grated • Spaghetti, cooked according to package directions • 2 tbsp chopped parsley, for garnish (optional)
DIRECTIONS
1. Wrap each chicken half in waxed paper and pound chicken to flatten. 2. Salt and pepper to taste. 3. Dip each half in egg; then in bread crumbs. 4. Fry in butter in hot skillet, turning and browning for about 6 minutes or until chicken is cooked through. 5. Remove from skillet. 6. Lower heat, add marinara sauce. Heat thoroughly. 7. Add chicken. 8. Place slices of mozzarella on top of chicken. 9. Sprinkle with Parmesan. 10. Cover and cook until cheese is melted. 11. Serve with spaghetti. Garnish with parsley and more Parmesan cheese.
