We normally only have one Employee of the Month, but this month, we had to honor two —TC Newlin and Stacy Large — together. They have both done SO much for our law firm over the years and ESPECIALLY in the past few months! The transition to working remotely has been seamless and successful thanks to these two. We all thank you from the bottom of our hearts!

TC has been with the law firm for 10 1/2 years. He is a Social Security disability attorney as well as our human resources manager. When we asked what his favorite thing is about his job, he said “I get to do a lot of different things every day, and all of those things are with the goal of helping people who really need it.” Stacy has been with the law firm for 12 1/2 years. She is the CEO of our Social Security department and manages and oversees all operations. Stacy said this about her job: “I love working at FSTN for many reasons. It is extremely rewarding knowing we help thousands of people every year in their most difficult time of need. I love all the wonderful things we do for our community, and, last but not least, I truly enjoy working with everyone at FSTN. I am blessed to be a part of the FSTN family.”

You can’t go wrong with grilled chicken and tomatoes on a warm summer’s evening. It’s a simple recipe that packs a flavor punch.

Ingredients

2 tbsp olive oil

1/4 cup tightly packed fresh basil leaves

1 clove garlic

8 Roma tomatoes

1/2 tsp salt

4 boneless skinless chicken breast halves (4 oz each)

3/4 cup balsamic vinegar

Directions 1.

For marinade: In blender, combine olive oil, garlic, salt, vinegar, and basil. Cut 2 tomatoes into quarters and add to mixture. Cover and process until blended. Halve remaining tomatoes for grilling. 2. In bowl, combine chicken and 2/3 cup marinade. Cover and refrigerate for 1 hour. Reserve remaining marinade. 3. Heat grill to about 350–400 F. Lightly oil grates. Grill chicken until internal temperature reads 165 F, about 4–6 minutes per side. Grill tomatoes until lightly browned, about 2–4 minutes per side. Discard remaining marinade. 4. Serve chicken and tomatoes with reserved marinade.
