In this issue, we are talking about the relationships that I build with our clients, and I wanted to bring your attention to a gentleman named “Jimmy.” Jimmy is a communicator, and he is always looking for new content. That is where I come into the picture. He questions me on things that he wants to know about and that are important to him and his friends. Whenever he stops by the office, Jimmy likes to pick my brain on two or three different topics that are interesting to him and his friends. He wants to get my insight, and what I think about the topic and if there are any legal issues or angles (as he calls them) that he needs to know about. Jimmy’s wife often tells me that he brings my name up at least two or three times a day like this: “Well, I just had a long conversation with my attorney on this topic” whenever he feels the need to “make a point.” After we have a conversation, Jimmy feels the need to share our insights with as many people as possible. His wife tells me he finds ways to bring it up in conversations and often switches topics to share his new insight with anyone who will listen. Now, if you knew me, you would know that I find this to be a little bit funny because I try not to take myself too seriously. But, I do enjoy the fact that Jimmy listens to me and feels that he needs to share our conversations with people that matter to him because he wants to help people. It’s always a pleasure to see Jimmy and spend a few minutes with him talking about different topics. Conversations with Jimmy are always entertaining and make my day more enjoyable. Slow Cooker Birria Tacos

INGREDIENTS • 3 dried guajillo chiles • 2 dried ancho chiles • 1 medium onion, chopped • 4 garlic cloves • 1 (14.5-oz) can diced tomatoes • 3 lbs beef chuck roast • 2 cups beef broth

• 2 tbsp apple cider vinegar • 1 tbsp dried oregano • 2 tsp ground cumin • 2 bay leaves • 1 tsp salt • Pepper, to taste • Corn tortillas • Fresh cilantro and diced onion for garnish

DIRECTIONS 1. Soak dried chiles in hot water for 15 minutes. 2. Process chiles, onion, garlic, and tomatoes in a blender until smooth. 3. Place beef in a slow cooker and pour the chili mixture over it. 4. Add beef broth, vinegar, oregano, cumin, bay leaves, salt, and pepper. 5. Cook on low for 8–10 hours or until the beef is tender. 6. Shred the beef using forks, then mix back into the sauce. 7. Fry tortillas in oil until crispy, then assemble tacos as desired.
