Method: 1. Combine peanut butter, maple syrup, and coconut oil in bowl, microwave for 20-30 seconds or until it's soft enough to mix easily. Stir in protein, vanilla extract, and salt until smooth. 2. Melt chocolate in microwave in 15-second intervals, stirring until completely melted and smooth. 3. Line a mini-muffin tin with paper. Spoon a small amount of melted chocolate into the bottom of each liner, spreading to create a chocolate base. 4. Place a dollop of peanut butter mixture on top and then top with more chocolate, ensuring the peanut butter is fully encased. 5. Refrigerate for 30 minutes or until set.

Method 1. Place all ingredients into a blender or food processor. 2. Blend until a smooth, pancake batter-like consistency. 3. Place a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a small amount of butter. 4. Pour small portions of the pancake batter onto the heated skillet, creating the desired pancake size. Cook until you see bubbles forming on the surface, then flip and cook the other side until it's golden brown. 5. Serve hot with your favourite toppings.
