Aussie Hemp Seed Power Bars Ingredients: • 1 cup Natural Road Australian Hemp Seeds • 1 cup Organic Road Rolled Oats • 1/2 cup Organic Road Dried Turkish Apricots, chopped • 1/2 cup Natural Road Raw Almonds, chopped • 1/4 cup Organic Road Chia Seeds • 1/4 cup Organic Road Maple Syrup • 1/2 cup unsweetened almond butter or peanut butter • 1 tsp vanilla extract • A pinch of salt • Optional: 1/4 cup dark chocolate chips or cacao nibs for a chocolatey twist. Instructions: 1. Line an 20cm x 20cm baking pan with parchment paper, leaving an overhang for easy removal. 2. In a large bowl, combine hemp seeds, rolled oats, dried apricots, almonds, chia seeds, and salt. Mix thoroughly. 3. In a small saucepan, gently heat maple syrup and almond butter over low heat until they melt together. Remove from heat and stir in vanilla extract. 4. Pour the wet mixture over the dry ingredients and mix until everything is well-coated. If adding chocolate chips or cacao nibs, fold in now. 5. Transfer mixture into prepared baking pan, press down firmly to ensure it's compact. 6. Place the pan in the refrigerator for at least 2-3 hours, or until the mixture sets. 7. Using the parchment overhang, lift set mixture out of the pan. Place on cutting board and slice into bars or squares. 8. Store in airtight container in refrigerator for up to a week.
