determined that everything that enters my body and my home is sustainable in every way, so my diet is based on a variety of whole foods and my supplements are plant- based. Variety is the key: I have had people say to me, “Oh, I eat lots of kale and hummus,” and I will answer, “That’s a good start – but we need much more variety than just kale and hummus!” With the viral loading that is still circulating in our post-CoVid world, we need more than fruit and vegetables to build immunity. I am now advising clients and readers to add plant- based supplements to their health regime. Vibrant Green Vitality Smoothie Ingredients: • 1 cup baby spinach or kale, washed and drained • 1 ripe banana • 1/2 avocado, pitted and peeled • 1/2 cup cucumber, sliced • 1 green apple, cored and chopped (keep the skin on for added fiber) • 1 tablespoon hemp, chia seeds or flaxseeds • 1 tablespoon Vital ALL-IN-ONE powder • 1 cup unsweetened almond milk or coconut water • A squeeze of fresh lemon or lime juice • A handful of fresh mint or parsley (optional, for a refreshing twist) • Ice cubes (optional) Directions: Place all ingredients in a blender. Blend on high speed until smooth and creamy. Taste and adjust the thickness by adding more almond milk or coconut water if desired. Pour into a glass, garnish with a sprig of mint or a slice of cucumber, and enjoy!
