Butternut Squash, 1 lb. each

2 ea.

Butter – Softened, Divided

4 Tbsp.

Orange – Zested

3 Tbsp.

1. Preheat oven to 350°F. Halve the squash lengthwise and remove the seeds and strings. Rub the insides with 2 Tbsp. softened butter; season with salt and pepper.

2. Place squash on a roasting pan, skin side down. Bake in a pre-heated 350°F oven for 30-40 minutes, until fork tender.

3. Remove the squash from the oven, scoop out the flesh and place in a food processor.

4. Add the orange zest, honey and remaining 2 tablespoons of butter. Puree until smooth.

5. Add a pinch of salt and ground cinnamon . Pulse a few times to incorporate.
