Recipe Card: Argentina Skirt Steak

Ingredients Limes – Juiced

2 ea. 4 ea. ½ ea.

Garlic Cloves – Crushed

Bunch of Flat-Leaf Parsley – Chopped

Extra Virgin Olive Oil

2 Tbsp. to taste to taste

Kosher Salt Black Pepper

Skirt Steaks – Trimmed

Instructions 1. Combine all the marinade ingredients , excluding the steak, in a baking dish. Add the beef and massage the marinade into the meat. Cover and refrigerate. 2. Prepare a hot grill or preheat a stove-top griddle over high heat. 3. Remove beef from marinade and season with salt and pepper . Place on the grill rack or griddle and sear over high heat for 2 to 3 minutes. 4. Turn the steaks, move to a cooler part of the grill, or lower heat to medium, and cook for 2 to 3 minutes more for medium-rare doneness. 5. Transfer steaks to a rack set over a platter and let rest for 3 minutes. Slice the steaks across the grain and serve with the relish .
