Recipe Card: Watermelon & Red Onion Relish

Ingredients Medium Red Onion – Thickly Sliced

Watermelon – Cubed Champagne Vinegar

Mint – Chopped

Flat Leaf Parsley – Chopped Fresh Jalapeños – Minced

Salt & Pepper

to taste

Grill or griddle

Instructions 1. Prepare a hot grill or stove-top griddle over high heat. Grill red onion slices for 3 to 4 minutes per side. Remove from heat and chop onion slices into 1/4-inch pieces. 2. In a large bowl, combine the watermelon , onion , olive oil , vinegar , herbs , jalapeños , salt and pepper . Toss, taste, and adjust the seasoning as needed. 3. Cover and refrigerate until chilled. About the Recipe Summertime heat is cooled by this refreshing, chilled watermelon relish. Crunchy and a little spicy, it is a wonderful embellishment for grilled steak, particularly skirt steak.
