Meet The Team Staff Spotlight Matt Lopez is a physical therapistwho specializes in outpatient orthopedic rehabilitation. He has spent the last 7 years working at Iberia Sports and Rehabilitation treating all types of injuries, including joint replacements and sports and work injuries as well as chronic pain patients. Matt is a native of NewIberia and completed his undergraduate studies in exercise science at the University of Louisiana at Lafayette. He continued his education at the University of South Alabama, and graduated with a Doctorate of Physical Therapy in 2012. Matt has specialty training in dynamic taping and is certified in dry needling. In his spare time, Matt enjoys spending time with his wife Brinkley and their 9-month-old daughter Malia. Matt also enjoys weight lifting and running obstacle course races. Directions Wash the mushrooms and carefullyremove the stemswithout breaking the caps. Finely chop the stems. Combine the shallots, garlic and vinegar in a small skillet or saucepan and cook for 1 to 2 minutes. Add the chopped mushroom stems and soy sauce and cook, stirring occasionally, for 3 to 5 minutes, until the mushrooms soften and release their juices.Add the spinach and cook, continuing to stir, until it is wilted and the liquid in the pan is absorbed. Remove from the heat and let cool for a few minutes, then stir in the yogurt. Season with salt and pepper to taste. Preheat the oven to 350ºF. Stuffthe spinach filling into the mushroom caps. Place the mushrooms in a baking pan and bake for 20 minutes, until tender. Remove from the oven and let sit for a few minutes for the filling to set before serving.
