Although Laurent works as a composer, nothing would be possible without his wife Martine. With two co-directors, Franck Derouet, Executive Chef, and Thomas Lorival, Head of the dining room and sommelier (photos, below), they federate and orchestrate a team full of desire, passion and humility: precision and rigour, in the service of a true art of living.
Laurent Petit decided to join Écotable, the first French sustai- nable restaurant label, in 2020: a true guarantee of solidarity and great pride in making the 3 Écotables and the 3 Michelin stars an inseparable duo. The restaurants awarded the label are committed to adopting an approach that respects the environment and health over the long term.
