This project investigates the presence and function of extracellular vesicles (EVs) in whey protein isolates (WPI) and whey protein phospholipid concentrates (WPPC), with a focus on miRNA content and potential gut health benefits. By characterizing EVs across suppliers and evaluating their impact on intestinal integrity, the project aims to uncover novel bioactive properties of dairy proteins. PROJECT GOALS: • Provide new knowledge on the presence, concentration, and glycosylation patterns of EVs and their miRNAs in WPI and WPPC. • Identify miRNAs that may enhance intestinal barrier integrity, informing potential functional food applications. • Enhance the value and competitiveness of WPI and WPPC by highlighting naturally occurring bioactive components without additional processing. • Contribute affordable methods for concentrating EVs, creating opportunities for enhanced bioactivity in dairy products. • Establish comprehensive miRNA profiles (miRNomes) of EVs, providing a foundation for future research and product development. This project is 50% co- funded in partnership with a California processor. CO- FUNDED
