FOOD SCIENCE, NUTRITION AND HUMAN HEALTH 2025-2026 DAIRY FOODS AND HIGH- QUALITY PROTEIN FOR PERSONALIZED NUTRITION RESEARCHER: Dr. Gail Bornhorst, UC Davis 2026 Project Budget: $82,743

This project evaluates protein digestion and peptide release from milk, kefir, and high-protein plant-based alternatives across diverse population groups, including elderly adults and individuals using acid-suppressing medications. The study aims to optimize understanding of how dairy proteins support personalized nutrition and health. PROJECT GOALS: • Provide new data on the digestibility and bioactive peptide release from dairy products, especially for elderly adults and those on acid-suppressing medications. • Support targeted marketing strategies emphasizing dairy’s benefits for specific populations. • Position dairy as a high-quality protein source and an integral part of personalized nutrition, highlighting advantages over plant-based alternatives. • Encourage increased dairy consumption by demonstrating functional health benefits and promoting protein intake for improved well-being. This project is 50% co-funded in partnership with National Dairy Council. CO- FUNDED
