Delicate, moist cupcakes infused with fresh and freeze-dried blueberries, crowned with a luscious blueberry buttercream frosting.
BLUEBERRY CUPCAKES
INGREDIENTS
In a small pot, add the blueberries and cook over medium low heat for about 10-15 minutes. They will soften and burst, use the back of a spoon to press them to release their juices. Cook until all the berries are completely soft, most have burst and it’s getting a bit thick. Press through a fine mesh sieve (you should have about 70g or 1/4 cup puree), and set aside to cool. Discard the skins.

1 cup blueberries fresh or frozen Zest of 2 lemons optional 3/4 cups sugar 2 large eggs 1/2 cup canola oil or other flavourless oil 1 cup plus 1/4 cup cake flour
1 tsp baking powder 1/4 tsp baking soda 1/2 tsp fine sea salt
Preheat oven to 375 F. Line a one dozen cupcake tin with liners.
1 tbs blueberry powder from ground freeze dried berries (grind this right before using as it tends to clump when left open) 1/3 cup buttermilk or kefir
In a bowl, rub the zest with the sugar, if using. Beat or whisk together the sugar and eggs until very light and fluffy, at least three to five minutes. Add the oil, pouring in slowly, and beating as you go. Stir in the blueberry puree. Add the flour and dry ingredients to the mix, and the kefir. Mix to just combine. Divide batter between muffin cups, you have enough to make 12 cupcakes. Bake for about 16-18 minutes, until the tops spring back when pressed.
BLUEBERRY BUTTERCREAM
Half a brick of cream cheese full fat, softened and at room temperature (113g) 1 cup unsalted butter softened 3 cups organic powdered sugar 1/2 tsp fine sea salt 2-3 tbs blueberry powder from ground freeze dried berries 1 tsp pure vanilla extract Blue food colouring (optional)
When cupcakes are cool you can frost them with the blueberry buttercream.
METHOD
BLUEBERRY BUTTERCREAM
In the bowl of a stand mixer fitted with the paddle attachment, use the back of a wooden spoon or a rubber spatula to press down on the room temperature cream cheese to smooth it out and remove any lumps. Add the butter and begin mixing it with the blueberry powder, salt and vanilla until light and fluffy - about four minutes. Add the powdered sugar and mix to combine. Add milk, if not using the cream cheese, just enough to get to a smooth consistency. Add blue food colouring until you get the desired hue. Place in an airtight container and set aside (over the counter, or if keeping overnight, store in the fridge then let come to room temperature before piping).

INGREDIENTS
2 oranges or four tangerines 1 - 1/2 cups demerara[raw] sugar 1 - 1/2 cups water 8 1-inch pieces ginger 1 bunch fresh mint 1 liter club soda Crushed ice METHOD Use a vegetable peeler to peel rind from oranges in thin pieces, taking care not to get white pith on rind. Cut oranges in half and squeeze juice into a three-quart saucepan. medium-high heat and bring to the boil, stirring constantly until sugar dissolves. Reduce heat to medium. Add orange rind, ginger, and mint; simmer for five minutes. Remove from heat and allow to cool to room temperature. Strain syrup, discarding solids. Store in a tightly sealed jar in the refrigerator for up one week. Add sugar and water to saucepan and place over To make sodas, fill a glass halfway with crushed ice. Add 1/4 cup of orange-ginger-mint syrup to glass and top off with club soda. If desired, add a splash of orange-flavoured vodka or spiced rum to glass before topping with club soda. This simple carrot cake recipe will amaze you with its ease. It yields a moist, tender cake, perfectly balancing the sweetness of fresh carrots with the tanginess of cream cheese frosting.

Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake layers to cool completely in the pans set on a wire cooling rack. Once cooled, invert the layers and remove the parchment paper. CREAM CHEESE FROSTING: In a large mixing bowl with a hand mixer or a stand mixer fitted with the paddle attachment, beat the butter on medium speed until very soft and smooth, about one minute. Add the cream cheese and beat until fluffy, about 30 seconds. With the mixer on low speed, gradually add in the powdered sugar. (Use more sugar for a firmer, sweeter frosting.) Once combined, scrap down the bowl and add the vanilla. Beat on medium-low speed until fluffy and easily spreadable, about one minute. FOR THE ASSEMBLY: Place one cooled cake layer top-side up on a cake stand or serving platter and spread 3/4 cup of frosting over the top, all the way to the edge of the cake. Place the other cake layer top- side down on top. Spread the remaining frosting over the top and side of the cake. If you desired, you can save some of the frosting to pipe decorations onto the cake or press chopped toasted pecans onto the frosting. Chill the cake for 30 minutes to set the frosting before slicing. Keep leftovers covered and refrigerated for up to one week.

Preheat the oven to 350°F. Lightly grease two nine-inch round cake pans with baking spray or butter, and line the bottoms with parchment paper. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In a separate medium bowl, whisk together the sugars, oil, eggs, and vanilla until well combined. Pour the wet ingredients into the dry mixture and stir together just until combined and only a few streaks of flour remain. Fold the carrots and pecans into the batter. Divide the batter evenly into the prepared pans.
You can replace ⅓ cup of vegetable oil with an equal amount of applesauce or canned crushed pineapple (drained well).
