The dish is particularly popular among the Xhosa and Zulu cultures, who have a long-standing tradition of coastal foraging and seafood preparation. You’ll find this popular dish all over South Africa with varying local spices and flavours added to suit the local palate – but here in the Deep South we love it just the way Grant makes it, enriched with cream, flavoured with garlic and polished with white wine from the Cape vineyards.
