Coconut Ice Cream is a traditional dessert that originated in Southeast Asia, particularly in Thailand and the Philippines. It is a popular treat in these regions. Due to the hot, tropical climate and abundance of coconut trees, coconut is an ideal ingredient for making ice-cream.
INGREDIENTS
Coconut Cream
400ml
Aquafaba (brine of chickpeas)
140ml
Vanilla paste or extract
5ml
Ground star anise
3ml
Castor sugar
375ml
method STEP 1
Simmer coconut cream, sugar, vanilla and star anise over medium heat for about 5 minutes until sugar has dissolved.
STEP 2 Allow to cool down completely. STEP 3 Whisk aquafaba on high speed about 8 minutes until stiff peaks form.
STEP 4
Gently fold into cooled coconut cream mixture. Pour into suitable sized container, seal and place in freezer for minimum 5 hours, stirring 2 to 3 times.
STEP 5
NOTE: This ice cream melts quickly, so take out of freezer just before serving.
