SPICY CARROT CAKE DATES BACK TO MEDIEVAL EUROPE, WHERE CARROTS WERE COMMONLY USED AS SWEETENERS IN DESSERTS DUE TO THE SCARCITY OF SUGAR. Over time, this delectable treat spread to various regions and now holds pride of place amongst the cake selection in every Deep South coffee-shop. And there are many! And they are all fabulous! And so is Astrid’s recipe. Enjoy! ABOUT THE COOK Astrid Haskins reflects on the meaning of the Valley to her, expressing a strong sense of community and appreciation for the laid-back lifestyle compared to busier parts of Cape Town. She values knowing her neighbours by name and the mutual support they share. Her inspiration for entering her carrot cake recipe in The Longbeach Mall Cookbook stems from her 40-year history of making the cake, earning her the title of “carrot cake queen” among family and friends. Having adapted the recipe over the years to her preference for a spicier cake, Astrid is excited about the prospect of a local recipe book and looks forward to trying out the other recipes. A born and bred Capetonian, Astrid has led an adventurous life, working in corporate before studying in the UK and then working in Paris for 13 years. Her journey included learning French, cooking for international students, and teaching English at university level. After extensive travel, she returned to South Africa and now lectures at a Theological College in Muizenberg, where she continues to thrive.
