method STEP 1

INGREDIENTS

Zest the skins of the lemons, taking care not to use the pith. Add to the Vodka.

Vodka

750ml

Lemons (washed in warm water to remove any pesticides)

STEP 2 Allow the lemon zest to steep in the Vodka for three to four weeks, shake daily. STEP 3 Dissolve the sugar in the boiling water to make a light syrup.

White granulated sugar

250ml

Boiling water

500ml

NOTE: Can be poured over ice-cream for a lovely treat!

STEP 4

Allow to cool and mix 500ml of the zested Vodka with 250ml of the syrup. Mix well. Chill and serve over ice or neat in a shot glass.

Alcohol by volume is approximately 30%.
