method STEP 1

INGREDIENTS

Preheat oven and sift flour, salt and cayenne pepper together.

Cake flour

2.5ml

STEP 2 Rub butter in with fingertips until it resembles fine breadcrumbs. STEP 3 Add cheese and egg and continue mixing until it forms a ball.

Strong cheddar cheese, grated

Pinch cayenne pepper

STEP 4

Divide the dough into 2 logs about 4cm in diameter. Wrap in cling wrap and chill for 2 hours. Place on greased tray and bake 15 minutes, until light brown. Slice into biscuits about 7cm thick. Allow to cool slightly on baking sheet, then transfer to cooling rack.
