Bread flour + extra for kneading and shaping

Combine all the dry ingredients and mix well.

Place on a floured surface and continue with the rest of the dough. Allow to prove for 10 minutes. Heat the oil until hot, test with a small piece of dough; it should rise to the surface immediately. Fry the balls, a few pieces at a time until golden brown, about 3 minutes a side. Drain on paper towels.

STEP 2 Add the lukewarm water until all the dry ingredients are moistened; do not make too wet. STEP 3 Coating your hands with flour, knead for about 10 minutes until the dough is soft and elastic.

Allow to rise in a warm place for 20 – 30 minutes or until doubled in volume. Knock the dough back until its original size. Pinch off pieces of dough, about the size of a tennis ball and roll until smooth.

NOTE: If the water is too hot, it will kill the yeast and the mixture won’t rise; if too cold, it will take longer to rise. Test the water with the knuckle of your finger, that will give a good indication of its warmth.
