In a large mixing bowl, combine oats, nuts/seeds, salt, and cinnamon. Pour in the oil, maple syrup or honey, and vanilla. Mix well until every oat and nut is lightly coated. Spread evenly onto the prepared baking sheet. Bake for 21–24 minutes, stirring halfway, until lightly golden. The granola will crisp up more as it cools. Let cool completely for at least 45 minutes. Stir in dried fruit and any optional add-ins. Store in an airtight container at room temperature for 1–2 weeks, or freeze in a sealed bag for up to 3 months. Banana Bread My dad didn’t bake often, but when he did, his Banana Bread was always a favourite. This is the recipe he swore by. Ingredients • 1 cup sugar
• 1 cup white sugar • 1 tsp lemon extract • ½ cup milk • Rind of 1 lemon • 1 ½ cups all-purpose flour • 1 tsp baking powder • 1 tsp salt • ½ cup crushed pecans or other nuts (optional) • ½ cup mixed peel (optional) Glaze • Juice of 1 lemon • ¼ cup powdered sugar Directions Preheat oven to 350°F.
