Rhubarb Cake One of my past co-workers used to bring this in every year as a treat during rhubarb season! Ingredients • 2 eggs • 1 ¼ cups white sugar • 1 tsp baking soda • ½ tsp salt • 2 cups flour • 2 ½ cups fresh rhubarb, cut up • 1 cup sour cream Topping 1 cup brown sugar ¼ cup flour ¼ cup butter or margarine Cinnamon (optional, but recommended) Directions Preheat oven to 350°F. With a mixer, beat eggs and white sugar until light and fluffy. By hand, mix in the baking soda, salt, flour, rhubarb, and sour cream until combined. Place batter in a greased 9” x 13” pan. Combine topping ingredients and sprinkle over batter. Sprinkle generously with cinnamon if desired, then bake for 45 minutes.
Chocolate & Peanut Butter Pie Ingredients • 1 pre-baked pie crust • 1 ½ cups creamy peanut butter • 1 ½ cups powdered sugar • 8 oz cream cheese, softened • 1 ½ cups heavy whipping cream (divided) • 2 cups semi-sweet chocolate chips • Assorted candies (mini peanut butter cups, Reese’s Pieces, etc.) Directions In a large mixing bowl, beat together the peanut butter, powdered sugar, and cream cheese until smooth and well combined. In a separate bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold the whipped cream into the peanut butter mixture until fully incorporated. Spread the peanut butter filling into the pre-baked pie crust, smoothing the top with a spatula. In a microwave-safe bowl, combine the chocolate chips and remaining ½ cup of heavy cream. Microwave in 30-second intervals, stirring between each, until the chocolate is melted and smooth. Pour the chocolate ganache over the peanut butter filling, spreading evenly to cover the surface. Decorate the top with assorted candies. Refrigerate the pie for at least 4 hours before serving.
