Ingredients 1 lb. ground beef 1 large egg ½ cup onion, chopped
Directions 1. Preheat oven to 375°F. Prepare a rimmed baking sheet with parchment paper. 2. In a medium bowl, combine beef, egg, onion, almond flour, 1 teaspoon Italian seasoning, ½ teaspoon salt and ¼ teaspoon pepper. Scoop into 1” meatballs and place on baking sheet. Bake 15-20 minutes, until internal temperature reaches 160°F. 3. Meanwhile, in a deep skillet over medium heat, add diced tomatoes and tomato paste. Cook about 5 minutes. 4. Meanwhile, in a small food processor or blender, add soaked cashews and almondmilk, blend until smooth. 5. Stir in basil, garlic and blended cashew mixture to the skillet. Bring to a simmer and cook about 5 minutes. Season with remaining Italian seasoning, ½ teaspoon salt and ¼ teaspoon pepper. 6. Place meatballs in sauce and simmer about 5 minutes. 7. Serve with fresh basil and refrigerate leftovers.
