SEVEN LAYER TACO DIP INGREDIENTS: 1 package taco seasoning mix 16 oz refried beans 8 oz cream cheese, room temperature 16 oz sour cream 16 oz salsa 1 tomato chopped 1 green bell pepper, chopped 1 bunch green onions, chopped 1 small head iceberg lettuce, shredded 6 oz sliced black olives, drained 2 cups shredded cheddar cheese

DIRECTIONS: 1. In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter. 2. Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans. 3. Top the layers with salsa. 4. Place a layer of tomato, green bell pepper, green onions, black olives and lettuce over the salsa. 5. Garnish with shredded cheese. STRAWBERRY KIWI SCHNAPPS SMOOTHIE

INGREDIENTS: 1 tray ice cubes, crushed in blender. 6 large or 8 medium fresh straw- berries (cleaned and diced) 1/2 cup Snapple or Ocean Spray strawberry kiwi cocktail juice (or brand of your choice) 2 oz strawberry Schnapps (less if you like) 2 Tbsp sugar (more or less, your choice) DIRECTIONS: 1. Add cleaned and diced strawberries. 2. Next cocktail juice. 3. Then Schnapps and sugar. 4. Blend until a smoothie texture. For a thicker smoothie add extra ice. 5. Garnish with a strawberry on the lip of glass or a mint leaf sprig.

1 cup old-fashioned rolled oats (quaker oatmeal, not instant) DIRECTIONS: 1. Preheat oven to 350 degrees 2. In a large bowl beat butter until creamy. 3. Gradually beat in powdered sug- ar, then salt, vanilla, and flour. 4. When blended and smooth stir in oats. shape dough into 1-inch balls and place on ungreased cookie sheets, about 2 inches apart. You can also flatten by pressing with fingers. 5. Bake 18-22 minutes or until golden brown. 6. While still warm, roll in pow- dered sugar. 7. Cool on wire rack. Makes 2 1/2 to 3 dozen cookies. CRAB BALLS INGREDIENTS: 1 Backfin crab meat 1 egg, beaten 2 crushed Ritz crackers 1 tsp yellow mustard 2 Tbsps fresh lemon juice 2 Tbsps parsley 1 tsp Old Bay seasoning 1 Tbsp Worcestershire sauce

DIRECTIONS: 1. Place crab meat in a mixing bowl and pick out any stray shell fragments. 2. Add crushed crackers, Old Bay seasoning, and parsley to the crab. 3. In a separate bowl, combine egg, mustard, lemon juice, and Worcestershire sauce. Whip with a whisk until smooth.

4. Pour egg mixture over the crab meat and crackers. Gently mix, careful not to break up large lumps of crab meat. 5. Mold into golfball-sized balls and place on a cookie sheet. 6. Bake at 350 degrees for 30 minutes.

TOMATO BASIL PASTA INGREDIENTS: 1/2 lb fettuccine pasta 2 medium sized ripe tomatoes 3 cloves garlic, chopped 6-8 basil leaves, cut into thin ribbons 2 Tbsps olive oil kosher salt and fresh ground pepper to taste parmesan cheese, grated DIRECTIONS: 1. Roughly chop the tomatoes and remove the seeds. 2. Put the tomatoes in a bowl with the garlic, basil and olive oil. 3. Season with salt and pepper. 4. SALISBURYMEATBALLS INGREDIENTS: 2 lbs ground beef 1 package dry onion soup mix 1/2 cup Italian bread crumbs 1/4 cup milk 1/4 cup all purpose flower 2 Tbsps vegetable oil 2 cans cream of chicken soup 1 package dry au jus mix 3/4 cup water

DIRECTIONS: 1. In a large bowl, mix together the ground beef, onion soup mix, bread crumbs, and milk using your hands. 2. Shape into meatballs. 3. Lightly dredge the meatballs in the flour and shake off the excess flour. 4. In a skillet, add the oil and heat to medium-high. Add the meatballs in batches to the skillet. 5. Brown on all sides.

6. Add the meatballs to the slow cooker. 7. In a large bowl, add the cream of chicken soup, au jus mix, and water. 8. Whisk until smooth and mixed well. 9. Pour over the meatballs in the Crock Pot and cook

PANTRY BREAKFAST CASSEROLE INGREDIENTS: 8 large eggs 1 lb breakfast sausage 1 red bell pepper 1 medium yellow onion 16 oz shredded mozzarella cheese 1/2 cup cream or milk 2-1/2 cups shredded potatoes (hash browns)

DIRECTIONS: 1. Cook sausage, onion, and red bell pepper in a skillet on the stovetop over med/med-high heat until the sausage is browned and veggies are cooked. Season with a little salt and pepper. Remove from heat. 2. In another skillet, cook hash brown (shredded potatoes) as listed on the package. If you are using fresh potatoes that you have shredded, add 2 Tbsp of vegetable oil to the hot skillet and add potatoes. Spread out potatoes so that they cover the bottom of the skillet. Let them cook until crispy then flip over and crisp up the other side. Remove from heat. 3. In a medium bowl, crack the 8 eggs into the bowl. Add the cream or milk and a little salt and pepper. Beat with a fork until light and fluffy. 4. Spray a 9”x13” baking pan with non-stick butter-flavored cooking spray. Spread cooked hash brown pota- toes over the bottom of the baking dish. 5. Add the sausage and veggies over the top of the potatoes. 6. Sprinkle 1/2 of the mozzarella cheese over the sausage and veggies. 7. Pour the egg mixture over the top of the casserole. 8. Add the remaining mozzarella cheese. Sprinkle fresh parsley over the top of the casserole. 9. Bake at 375 for 30-45 minutes until knife inserted comes out clean (casserole will look “set” and edges will be slightly browned and pulling away from edges of baking pan/dish).
