FRIED RICE
INGREDIENTS: 1/4 cup onion, chopped 2 cups cooked rice 1 can water chestnuts, sliced 1 cup peas, thawed 1 cup carrots, shredded 3 eggs 2 Tbsps soy sauce 2 Tbsps peanut oil DIRECTIONS: 1. Saute onion in peanut oil until onion is tender. 2. Stir in rice, chestnuts, peas and carrots. 3. Cook over low heat for 8-10 minutes stirring frequently. 4. Stir in beaten eggs, and cook 3 minutes longer stirring occasion- ally. Stir in soy sauce. 5. Cooked cubed pork, beef or lamb can be added for varieties.
