FRENCH ONION SOUP INGREDIENTS: 1 Tbsp butter 5 medium yellow onions or mix yellow onions and red onions, sliced 2 bay leaves 3 cups low sodium beef broth 3 cups low sodium chicken broth 1 can campbell’s french onion soup or beef consomme 1/2 cup dry red wine, optional 1/2 tsp dried thyme sliced baguette or sourdough bread mozzarella, swiss, or your favorite cheese DIRECTIONS: 1. Heat butter in skillet, slice onions. Add onions to butter. Cover and caramelize over low heat, about 30 minutes. Check on onions about every 10 minutes and stir. At the end, splash with a bit of vinegar to bring out the flavor. Add broths, bay leaves and thyme to a large pot. Add onions. Simmer for about 15 min- utes and season with black pepper. Be sure and remove bay leaves. 2. Preheat broiler. Divide soup be- tween ovenproof bowls and top with a slice of bread. Top with cheese and broil until cheese is melted and bubbling, about 3 minutes. Saute 1 cup onion and garlic in olive oil until clear. Add to liquid in pot. 3. Add shoepeg corn, green chilis, great northern beans, 1 tsp cumin, and lime juice. Heat. 4. Serve over white corn tortilla chips andMonterey Jack cheese.

DIRECTIONS: 1. Preheat oven to 375. 2. Line muffin tin with paper liners. 3. Stir in flour, baking pow- der, baking soda, nutmeg and salt together in a large bowl. 4. In a seperate bowl, beat butter and sugar together until creamy. 5. Beat in eggs, bananas, sour cream and vanilla and stir to mix well. 6. Add flour mixture to the but- ter-sugar mixture and stir until flour is moist. 7. Gently stir in pecans. 8. Spoon batter into a muffin tin to just below top of liner. 9. Bakemuffins 20-25minutes or until a toothpick comes out clean.
