MEXICANWEDDINGCOOKIES INGREDIENTS: 1 cup butter, softened
DIRECTIONS: 1. Beat raw eggs in a large bowl until well mixed. 2. Slice zucchini into 1/4 inch thick rounds. 3. Dip zucchini in egg batter. 4. Place on greased cookie sheet or cake pan in one layer. 5. Sprinkle grated Parmesan on zucchini slices. 6. Sprinkle bread crumbs evenly over zucchini slices. 7. Bake at 450 degrees for 15 minutes. 1/2 cup powdered sugar 1-1/2 tsps vanilla extract 2 cups all-purpose flour 1/2 Tbsp salt
1 cup old-fashioned rolled oats (quaker oatmeal, not instant) DIRECTIONS: 1. Preheat oven to 350 degrees 2. In a large bowl beat butter until creamy. 3. Gradually beat in powdered sug- ar, then salt, vanilla, and flour. 4. When blended and smooth stir in oats. shape dough into 1-inch balls and place on ungreased cookie sheets, about 2 inches apart. You can also flatten by pressing with fingers. 5. Bake 18-22 minutes or until golden brown. 6. While still warm, roll in pow- dered sugar. 7. Cool on wire rack. Makes 2 1/2 to 3 dozen cookies.
